Caramel Tarts


Crust

Ingredients
  • 250g butter
  • 1 cup plain flour
  • 1 tablespoon icing sugar
Method
Rub all of the ingredients together. Press into pie tin. Cook in oven at 180°C until golden brown.

Filling

Ingredients
  • 1 tablespoon butter
  • 1 tablespoon golden syrup
  • 3 egg yolks
  • Almost one 395 gram can condensed milk
  • 1 tablespoon sugar
Method
Melt butter and golden syrup together in a pot. Add egg yolks, condensed milk and sugar. Cook until the mixture bubbles. Cool.

Meringue

Ingredients
  • 3 egg whites
  • 3 tablespoons castor sugar
Method
Beat egg whites and sugar until peaks form.

Tarts

Spoon caramel into crust cases. Top with meringue. Ensure meringue completely covers the caramel and there are no gaps between the meringue and the crust. Cook in oven at 180°C until meringue is golden brown.
