Chilli Beans
Ingredients
- packet of penne pasta cooked and drained
- 1 chopped onion
- 2 440g cans kidney beans
- 1 440g can sweet corn kernels
- 1 440g can crushed or chopped tomatoes
- 1 packet Old El Paso chilli seasoning
- sour cream
Method
Microwave onion for 2 minutes.
Stir in chilli seasoning.
Add drained and rinsed kidney beans, can of tomatoes and corn. (Save corn juice to use if more liquid is needed)
Stir and microwave until hot and slightly mushy.
Serve on drained pasta with a blob of sour cream.
Notes
- Chilli flakes can be added with the tomatoes, corn and beans for extra heat.
