Pumpkin Soup


Ingredients
  • Pumpkin (a mixture of varieties is good)
  • Potato
  • Onion
  • Stock cube (vegetarian or chicken)
Note: quantity of pumpkin to potato to onion is 4 : 1: 0.25

Method

Peel and chop pumpkin, potato and onion.
Cook in batches in microwave, or boil on stovetop until soft.
Strain, keeping liquid.
Blend in food processor or using potato masher until smooth.
Add cooking liquid with dissolved desired amount of stock cube as seasoning until you reach desired consistency.
Serve with a spoonful of sour cream and crusty bread.

The Marshalls like theirs thick enough for a spoon to stand up in it!

Variations

Add a can of creamed corn when blending.
A pinch of nutmeg adds a different flavour.
