Roasted Pumpkin Chips
Ingredients
- Pumpkin
- Virgin olive oil
- Salt
Method
Pre heat the oven to 200ºC.
Cut the pumpkin up into 2cm thick slices.
Place the pumpkin and oil in a bowl.
Toss the slices until all of the pumpkin is coated.
Place slices on oven trays.
Season.
Put the trays into the oven.
Turn the slices over when they are golden brown on the bottom.
Serving Suggestions
- No need to peel the pumpkin, the roasted chips can be eaten with the skin on.
- Serve with cheese.
- Jan and Vaughn recommend cottage, Gorgonzola and Camembert cheeses. The sharper the better.
- Sour cream is good, too.
