Spinach and Mushroom Quiche – 3 Ways


You will need a full sized baking dish
Preheat oven to 180 degrees celsius


Ingredients
  • 9 eggs beaten gently
  • 1 half bag of fresh spinach or 1 box of frozen spinach
  • 1 brown onion finely chopped
  • 250 ml pouring cream
  • 500g grated cheese
  • Sliced mushrooms
  • 100g grated cheese (for top)

Base Number 1
Frozen puff pastry (Butter puff pastry preferred)


Base Number 2
Sliced boiled potatoes layered in dish


Base Number 3
Paprika Pastry
  • 1 cup wholemeal plain flour
  • 1 cup self raising wholemeal flour
  • 1 teaspoon paprika
  • 250g butter
  • 1 egg yolk
  • ½ teaspoon salt

Mix dry ingredients
Rub in butter
Add eggyolk and mix with knife
Squash into baking disk base



Method
Pour quiche mix into base or layer with potatoes
Sprinkle cheese on top
Bake in oven at 180 degrees celsius for 30 minutes then until golden brown and cooked in the middle.
